Healthy Cookies

I don't know about Yall but my husband has a MAJOR sweet tooth and he loves cookies. Since he is trying to eat better and lose a little weight, I came up with this simple, healthy cookie recipe. Now,don't misunderstand, these don't taste like a gooey delicious chocolate chip cookie but my husband and one year old both like them a lot. The best part is they have no flour or added sugar in them!  These are great to make up ahead of time and have on hand for those mornings you just don't have time to make breakfast!

Basic Ingredients

2 ripe bananas
1 cup quick cooking oats
1/3 cup peanut butter
1/2 tsp vanilla extract
1/2 tsp cinnamon

Instructions

Preheat oven to 350
In a medium size bowl mash the bananas and add the other four ingredients. Mix well. Scoop by the spoonful onto a cookie sheet and bake for 15 minutes. I usually flatten them out a little on the pan because they don't really change shape while cooking.  This recipe yields about a dozen cookies.

The great part about these cookies is that after you make the basic recipe you can add in anything you want.  Here are just a few suggestions.

Raisins
Nuts
Chocolate chips
Diced apples
Dried fruit

Hope you enjoy these as much as my family does and happy baking!
